• Pumpkin Spice Cookies

    • 1 pkt (18.5z) lowfat yellow cake
    •     Mix
    • 1/2 c. Quick cooking oats
    • 2 tsp Pumpkin pie spice
    • 1 can (16oz) cooked pumpkin
    • 2 Tbsp. Oil
    • 1 x Egg, slightly beaten
    •     FROSTING
    • 3 c. Powdered sugar
    • 2 tsp Grated orange peel
    • 3 Tbsp. To 4 orange juice


    1. Heat oven to 350f. Lightly grease cookie sheets. In large bowl, combine all cookie ingredients; mix till well blended. Drop dough by 1/4 cupfuls onto cookie sheets, spread to 3 circle with back of spoon. Bake 14-20 min or possibly till edges are light golden. Immediately remove from cookie sheets, cold completely.
    2. Combine all frosting ingedients, adding sufficient orange juice to reach proper spreading consistency. Frost cooled cookies. Decorate with candy corn and raisins, if you like.
