Pumpkin Poundcake With Brown Sugar Walnut Glaze
Ingredients
- 2 1/2 c. Flour
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1 Tbsp. Pumpkin pie spice
- 3/4 c. Dark brown sugar, packed
- 1/2 c. Granulated sugar
- 3/4 c. Butter, softened
- 1 x Egg
- 1 c. Pumpkin puree
- 1 tsp Vanilla
- 1 c. Raisins
- 1/2 c. Macadamia nuts, minced
Directions
- Preheat oven to 325. Combine flour, baking soda, salt and spice. Beat sugars together with mixer. Beat in butter. Add in egg, pumpkin and vanilla.
- Beat till well mixed, light and fluffy. Stir in flour mix, raisins and nuts. Drop by round spoonfuls onto ungreased cookie sheets 2 " apart.
- Bake till slightly browned along edges, about 20 min. Cold on flat surface.
