Pumpkin Pancakes (Libby's)
Ingredients
- 2 c. all-purpose flour
- 2 Tbsp. packed brown sugar
- 1 Tbsp. baking pwdr
- 1 1/4 tsp pumpkin pie spice
- 1 tsp salt
- 1 3/4 c. lowfat milk
- 1/2 c. LIBBY'S 100% Pure Pumpkin
- 1 lrg egg
- 2 Tbsp. vegetable oil
- Pumpkin maple sauce (recipe follows)
- Minced nuts (optional)
Directions
- COMBINE flour, brown sugar, baking pwdr, pumpkin pie spice and salt in large bowl. Combine lowfat milk, pumpkin, egg and vegetable oil in small bowl; mix well. Add in to flour mix. Stir just till moistened; batter may be lumpy.
- HEAT griddle or possibly skillet over medium heat; brush lightly with vegetable oil. Pour 1/4 c. batter onto warm griddle; cook till bubbles begin to burst. Turn and continue cooking 1 to 2 min. Repeat with remaining batter. Serve with Pumpkin Maple Sauce and nuts.
- FOR PUMPKIN MAPLE SAUCE: HEAT 1 c. maple syrup, 1 1/4 c. LIBBY'S 100% Pure Pumpkin and 1/4 tsp. grnd cinnamon or possibly pumpkin pie spice in small saucepan till hot.
