  • Pumpkin Pancakes (Libby's)

    Ingredients

    • 2 c. all-purpose flour
    • 2 Tbsp. packed brown sugar
    • 1 Tbsp. baking pwdr
    • 1 1/4 tsp pumpkin pie spice
    • 1 tsp salt
    • 1 3/4 c. lowfat milk
    • 1/2 c. LIBBY'S 100% Pure Pumpkin
    • 1 lrg egg
    • 2 Tbsp. vegetable oil
    •     Pumpkin maple sauce (recipe follows)
    •     Minced nuts (optional)

    Directions

    1. COMBINE flour, brown sugar, baking pwdr, pumpkin pie spice and salt in large bowl. Combine lowfat milk, pumpkin, egg and vegetable oil in small bowl; mix well. Add in to flour mix. Stir just till moistened; batter may be lumpy.
    2. HEAT griddle or possibly skillet over medium heat; brush lightly with vegetable oil. Pour 1/4 c. batter onto warm griddle; cook till bubbles begin to burst. Turn and continue cooking 1 to 2 min. Repeat with remaining batter. Serve with Pumpkin Maple Sauce and nuts.
    3. FOR PUMPKIN MAPLE SAUCE: HEAT 1 c. maple syrup, 1 1/4 c. LIBBY'S 100% Pure Pumpkin and 1/4 tsp. grnd cinnamon or possibly pumpkin pie spice in small saucepan till hot.
