Pumpkin Orange Mini Muffins
Ingredients
- 1 med Orange
- 1/2 c. Sugar
- 1 3/4 c. Flour
- 2 tsp Baking pwdr
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 1/4 tsp Cloves
- 1/3 c. Shortening
- 1/2 c. Minced dates
- 2 x Large eggs
- 1 c. pumpkin cooked and mashed
- 1/3 c. Orange juice
- 2 tsp Grated orange peel
- 2 Tbsp. orange juice (to 3T)
- 1/4 c. Sugar
Directions
- Heat oven to 375F. Grease 36 mini muffin c.. In large bowl, beat shortening and 1/2 c. sugar till light and fluffy. Add in pumpkin, orange juice, grated orange peel and Large eggs; blend well. Lightly spoon flour into measuring c.; level off. Add in flour, baking pwdr, baking soda, salt, cinnamon and cloves; stir just till dry ingredients are moistened. Mix in dates. Fill each c. 3/4 full. Bake 14-17 min or possibly till very light golden and toothpick tests clean. cold 1 minute, remove from pan. Brush tops with orange juice and dip in sugar.
- To use a standard muffin tin, fill 2/3 full and bake at 400F. 18-22 min.
