Ingredients

  • 2 slightly beaten large eggs
  • 2 c. sugar
  • 1/2 c. oil
  • 1 c. Libby's Solid Pack Pumpkin
  • 2 1/4 c. flour
  • 1 T pumpkin pie spice
  • 1 T baking soda
  • 1/2 teaspoon salt
  • 1 c. minced walnuts
  • 1 c. raisins (seedless)
  • 1 c. minced cranberries

Directions

  1. Put together large eggs, sugar, oil and pumpkin. MIX WELL. Add in flour, pie spice, soda and salt. CONTINUE MIXING. Add in walnuts, raisins and cranberries. Stir till dry ingredients are moist.Spoon batter into 2 greased and lightly floured 8 x 3 1/4 x 2 1/4 inch LOAF PANS.
  2. Bake at 350 degrees for 1 hour or possibly till toothpick comes out clean.
