  • Pumpkin Chocolate Chip Cupcakes

    Ingredients

    • 1 lb Pkg. pudding-included yellow cake mix
    • 1 c. Canned pumpkin
    • 1/2 c. Water
    • 1/3 c. Oil
    • 3 x Large eggs
    • 1 tsp Cinnamon
    • 1/2 tsp Nutmeg
    • 1 c. Miniature semisweet chocolate chips
    •     FROSTING
    • 2 tsp Cinnamon
    • 16 ounce Can vanilla frosting

    Directions

    1. Heat oven to 350F degrees. Line 24 muffin c. with paper baking c.. In large bowl, combine all cupcake ingredients except chocolate chips; beat at low speed till moistened. Beat 2 min at high speed. Mix in chocolate chips. Fill paper-lined muffin c. 3/4 full. Bake at 350F degrees for 15 to 20 min or possibly till toothpick inserted in center comes out clean. Cold in pan 5 min. Remove from pan; cold 20 min or possibly till completely cooled.
    2. Stir cinnamon into vanilla frosting. Frost cooled cupcakes.
