  • Pulled Pork With Root Beer Barbecue Sauce

    Ingredients

    • 3 lb pork sirloin roast trimmed
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1 Tbsp. veg. oil
    • 2 med onions cut in thin wedges
    • 1 c. root beer
    • 2 Tbsp. garlic chopped
    • 3 c. root beer
    • 1 c. chili sauce
    • 1/4 tsp root beer concentrate optional
    • 1/8 tsp Tabasco sauce optional
    • 1 x Serving :
    • 10 x hamburger buns toasted
    •     lettuce leaves optional
    •     tomato slices optional

    Directions

    1. Pork: Season the meat with salt and pepper. Brown the meat on all sides in the oil. Transfer the meat, onions, root beer and garlic to a 4 qt electric crockery cooker. Cover and cook on high for 4 to 5 hrs, or possibly on low for 8 to 10 hrs.
    2. Sauce: In a medium sauce pan, bring the root beer and chili sauce to a boil. Reduce the heat and simmer, stirring occasionally, till reduced by half - about 30 min. Add in the concentrate and Tabasco.
    3. Serving: Transfer the meat to a cutting board. Using a slotted spoon, transfer the onions to a serving platter. Throw away the juices. Using two forks, pull the meat apart into shreds. Line the buns with lettuce and tomato. Add in the meat and onions. Spoon the sauce over, top with the bun top and serve.
