  • Preserve-filled pastry bites

    A nice bite-sized,sweet treat that can brighten any season.

    Ingredients

    • 1 stick unsalted butter, softened
    • 4 ounces low-fat cream cheese, softened
    • 1 cup gluten free flour, plus additional for work surface
    • 1/2 teaspoon xanthan gum
    • Your favorite fruit preserves
    • disposable cake decorating bags

    Directions

    1. Beat butter and cream cheese together in a large bowl until smooth. Combine flour and xanthan gum in a separate,medium-sized bowl and add to butter mixture gradually beating until a soft dough forms. Divide into 2 and flatten into discs,wrap discs in plastic. Refrigerate 1hour or until firm.
    2. Preheat oven to 375 F. Roll out dough one disc at a time on a floured surface to 1/8" thick. Cut into 2 1/2" squares or use same diameter round cookie cutter.
    3. Place 1/4 cup fruit preserves into cake decorating bag and squeeze 3/4 to 1 teaspoon of preserves onto each cookie.
    4. Pinch opposite sides together to seal dough.
    5. Place 1" apart on parchment paper covered cookie sheet.
    6. Bake 10 to 15 minutes or until lightly brown. Remove to wire rack to cool completely.
