Prawn and vegetable Rice

- Fresh or frozen prawns 600 gms
- Rice soaked-3 cups
- 1 tsp each garlic and ginger finely crushed
- salt and pepper to taste
- mild red or green chillis-4
- 2 inch cinnamon sticks
- 2 cardamoms
- 2 cloves
- oil-6 tbsp
- onions finely chopped-2 med sized
- coconut milk -2 cups( or you could use vegetable stock if you wish)
- green peas fresh or frozen-1 cup
- cauliflower chopped into small florets-1/2 cup
- carrots diced small- 1/2 cup
Directions
- Slice and mix prawns with salt and pepper
- grind chillis and whole spices with a little water to a paste consistency.
- Heat oil in a pan
- Add onions and saute.Add crushed Ginger and garlic and further saute for 1 min
- Add vegetables and marinated prawns and saute well.
- Add ground paste and mix well.
- Add coconut milk and stir.
- Add 4 cups water.
- Cover and cook till rice is done.
- Serve with spiced yogurt and some crisps on the side.
