  • Prawn And Plantain With Coconut Sauce

    Ingredients

    • 3 x Ripe plantains
    • 500 gm Large uncooked prawns
    • 200 ml Coconut lowfat milk
    • 50 gm Butter
    • 25 gm Creamed coconut
    • 4 tsp Tomato puree
    • 2 tsp Angostura
    • 1 x Clove garlic, crushed
    • 1/2 tsp Grnd black pepper
    •     Salt
    •     Cumin
    •     Grnd coriander
    •     Paprika
    •     Fresh coriander

    Directions

    1. First wash and trim ends off plantains. Cut in two and steam for 20 min.
    2. Heat the butter in a large frying pan, add in prawns, garlic, tomato puree, coriander, cumin, black pepper, salt, Angostura and creamed coconut. Fry gently for 3 min stirring all the time. Add in coconut lowfat milk and continue frying and stirring for a further 3 min.
    3. To serve peel plantains and slice each half into four strips, arrange on a plate and top with the prawn mix. Garnish with paprika and a sprig of fresh coriander.
