    Fast Protein way to Start the day.

    Ingredients

    • 2 large eggs
    • 1/2 cup plain egg whites.
    • 2 cups baby spinach
    • 1 oz low fat cheese, shredded
    • 2 slices lean Canadian Bacon. (or ham)
    • 2 whole wheat english muffins
    • 1 tbs Mrs Dash seasonings

    Directions

    1. Split and toast the English Muffins.
    2. Using 1 minute bursts in the microwave wilt the spinach.
    3. Squeeze any excess liquid out of the spinach and set aside.
    4. In a non-stick pan mix the 2 eggs and egg whites until well blended.
    5. Sprinkle the Mrs Dash over the eggs and cook on low until semi-set.
    6. Scramble once more and add the dried spinach and the shredded cheese.
    7. Allow to set completely in the pan and the cheese has melted.
    8. Using a drinking glass or biscuit cutter, carefully cut 2 circles from the eggs and cheese mixture.
    9. Place each egg circle on one side of each English Muffin.
    10. Add condiments if needed and enjoy.
