  • Powderpuff Ribs

    Ingredients

    • 4 x Racks baby back pork (4 lb)
    •     Vegetable spray veg. oil
    • 3/4 c. Powdered Rib Rub (see following recipes)
    • 2 c. Applewood chips soaked in 2 c. apple cider then liquid removed

    Directions

    1. Remove the papery skin on the back of each rack of ribs by pulling it off in a sheet with your fingers. (Use a corner of a dish towel to secure your grip, or possibly ask your butcher to do it.) Spray the ribs on both sides with veg. oil. Generously sprinkle the rub on both sides of the ribs, patting it in with your fingers. Cover and marinate in the refrigerator for 1 hour.
    2. SMOKER METHOD: Preheat the smoker to 225F.
    3. Place the ribs in the smoker and smoke-cook till tender and the meat pulls away from the bones, about 4 hrs.
    4. CHARCOAL GRILL METHOD: Set up the grill for indirect grilling, and preheat to 325F. Toss half the chips on the coals. Place the ribs in the center of the grate (ideally in a rib rack, if you have one), away from the fire. Smoke-cook the ribs till tender and the meat pulls away from the bones, 1 1/2 to 2 hrs. Turn racks and replenish the charcoal and chips after 1 hour.
    5. GAS GRILL METHOD: Set up the grill for indirect grilling. Place chips in the smoker box and preheat the grill to 325F. (you'll need to preheat some grills to high before you see smoke. Then lower the heat to 325F.) Place the ribs in the center of the grate (ideally in a rib rack, if you have one), away from the fire. Smoke-cook the ribs till tender and the meat pulls away from the bones, 1 1/2 to 2 hrs. Turn the racks after 1 hour.
