Potatoes with Green Onion & Dill

Potatoes with Green Onion & Dill have been a summer favourite for years. Fresh from the garden potatoes smothered in a green onion, dill & butter sauce.

Ingredients

  • 2 1/2 - 3 pounds new potatoes
  • 2 tbsp. fresh dill (chopped)
  • 3 green onions (finely diced)
  • 1/4 cup butter
  • Salt & pepper (to taste)

Directions

  1. Preheat oven to 400ยบ F
  2. Wash, dry and prick potatoes
  3. Place in a baking dish and cook until done (about 1 hour)
  4. When done, remove from oven and set aside to cool slightly
  5. For the sauce:Finely chop the green onion and dill
  6. Heat butter in a small pan
  7. When hot, add green onion and cook for 2 minutes
  8. Remove from heat and mix in dill
  9. Cut potatoes into chunks (while they are warm) and place in serving bowl
  10. Pour sauce over top
  11. Season with salt and pepper
  12. ENJOY!!
