  • Potatoes And Ham With Cheese [Oven Or Micro]

    Ingredients

    • 2 Tbsp. Butter
    • 4 Tbsp. Flour
    • 1 tsp Salt
    •     Pepper, black
    • 2 c. Lowfat milk
    • 1 c. Cheese,shredded
    • 4 c. Potatoes, cooked & diced
    • 1 c. Ham, diced

    Directions

    1. Cheese sauce: Heat butter in skillet; blend in flour, salt and pepper. Add in lowfat milk slowly; cook over low heat till thickened, stirring constantly.
    2. Remove from heat; add in cheese. Stir till melted. Casserole: Preheat oven to 37 5. Layer potatoes and ham in greased baking dish; pour cheese sauce over top. Bake 40 min. Microwave: layer potatoes and ham in microwave-safe dish. Top with cheese sauce. Microwave on HIGH 4 min. Individual dishes: layer potatoes and ham in microwave-safe bowl or possibly plate. Microwave on HIGH 1 minute. Night before preparation: cook and peel potatoes, then chill in plastic bag. Make cheese sauce and chill. If making casserole, dice and layer potatoes and ham. Add in cheese sauce just before baking, so it doesn't develop a tough film on top.
