Hello Mary...I decided to take down this recipe...although time consuming...I think I'm up for the challenge. I got a huge bag of potatoes the other day. It kind of explains why I've been looking for interesting recipes to go with this tuber ;o)

Potato dumplings

- 2 3/4 c. flour
- 150 ml water
- 1 egg
- 3 potatoes
- 1 onion
- 2 Tbsp extra virgin olive oil
- salt, pepper
Directions
- Boil potatoes and mash them well. Stir fry chopped onion for 5 min in oil, add it to the puree, pepper and stir.
- Prepare dough by mixing flour, water, egg, salt.

- Boil for 12 mins in salted boiling water.
