Potato And Celery Root Puree
Ingredients
- 1 1/2 c. diced celery root (hard)
- 1 c. diced Russet potatoes
- 1/2 teaspoon chopped shallots
- 1 1/2 tbsp. butter
- Salt & pepper
Directions
- Cook celery root in boiling water till tender, 15 to 20 min; drain. Cook potatoes till soft and drain. Saute/fry shallots in part of butter. Add in celery root, potatoes and shallots to food processor (blender). Puree. Add in salt, pepper and additional butter.
