Post-Bikram Mango Delight

I made this yesterday for breakfast after a very intensive Bikram session. The delicious ripe mango, coconut and nuts with the fresh hint of mint was so cooling and satisfying. I think I'll be eating this fairly regularly over the Summer!

Ingredients

  • 1 Mango cubed (munch on the stone - don't waste a thing!)
  • 1/3 cup of natural yoghurt
  • 2-3 tbsp coconut milk or cream
  • 2 brazil nuts
  • 3-4 walnuts
  • 6-7 almonds
  • Shredded coconut
  • Mint

Directions

  1. Place the mango in a bowl. Dolop on the yoghurt and coconut milk (or cream). Sprinkle over chopped up nuts, mint and coconut.
  2. Sit in the sunshine and eat happily!
