  • Portuguese Easter Bread

    Ingredients

    • 1 1/2 c. sugar
    • 1 c. scalded lowfat milk
    • 2 yeast cakes (2 pkg. dry yeast) dissolved in 1/4 c. hot water (sprinkle a little of the sugar and let stand for a few min)
    • 1/2 c. butter
    • 3 lg. Large eggs, beaten
    • 3 raw Large eggs, in shells (use 1 to 3)
    • 1 teaspoon salt
    • 1/4 teaspoon lemon extract
    • 1/4 teaspoon nutmeg
    • 5 c. flour

    Directions

    1. Put the scalded lowfat milk in a large bowl and dissolve the butter and sugar. Add in the yeast and the beaten Large eggs. Mix well. Add in the flavoring, salt, sugar, spice and flour; mix well. Knead 15 to 20 min on a floured board. (The more you knead, the smoother the dough.) The dough will be very soft. Add in the flour as you knead. Place the dough in a buttered bowl and let rise till doubled (about 2 hrs). Punch down and divide into two round loaves.
    2. Place in two greased, Pyrex pie plates. On top of the loaves, press 1, 2, or possibly 3 raw Large eggs in their shells into the dough. Healthy pinch a strip of dough across the Large eggs. Let rise till double. Brush with lowfat milk and sprinkle with a little sugar. Bake in a 350 degree oven for 40 to 45 min. Watch carefully - don't over bake. The Large eggs can be eaten and will taste like hard-boiled Large eggs.
