    Pork Roast with Onion and Green Apple

    A slow roasted pork roast recipe for a tender and juicy roast. I use the preseasoned pork roast from Hormel as a shortcut, no brining, and my local supermarket regularly runs them on sale at 2 for 1.

    Ingredients

    • 1 24oz pork roast, Hormel, roast flavor
    • 2 Tbsp olive oil
    • 1 1/2 tsp Herbes de Provence (or Italian seasoning if you prefer)
    • 1 medium white onion, chopped
    • 1 Granny Smith apple, chopped
    • 1/4 cup dry white wine
    • 1/2 cup chicken broth
    • salt and pepper to taste

    Directions

    1. pre-heat oven to 250 degrees
    2. sprinkle the roast with the 1/2 of the Herbes de Provence
    3. heat the oil in a dutch oven and brown the seasoned roast on all sides
    4. remove roast from pan and set aside
    5. add chopped onion and cook until translucent and beginning to brown
    6. add chopped apple to the onion and continue to saute for 2 minutes
    7. add remaining Herbes, wine and broth and bring to a boil
    8. return roast to the pan, cover and place in oven
    9. roast at 250 for approximately 1 hour until internal temperature of roast reaches 160 degrees.
    10. remove roast from pan to serving dish and tent with foil, allow roast to rest for 20 minutes before slicing
    11. return the pan with the onion and apple mixture to the stove and simmer uncovered to reduce
    12. if you prefer a smoother sauce carefully blend with an immersion blender (I tilt the pan to provide a deeper mixture so there is no spatter)
    13. add salt and pepper to taste
    14. before carving roast add drippings to onion and apple and bring to full boil for a minute or so
    15. serve roast slices with onion and apple sauce either on top or on side
