- 1 24oz pork roast, Hormel, roast flavor
- 2 Tbsp olive oil
- 1 1/2 tsp Herbes de Provence (or Italian seasoning if you prefer)
- 1 medium white onion, chopped
- 1 Granny Smith apple, chopped
- 1/4 cup dry white wine
- 1/2 cup chicken broth
- salt and pepper to taste
Directions
- pre-heat oven to 250 degrees
- sprinkle the roast with the 1/2 of the Herbes de Provence
- heat the oil in a dutch oven and brown the seasoned roast on all sides
- remove roast from pan and set aside
- add chopped onion and cook until translucent and beginning to brown
- add chopped apple to the onion and continue to saute for 2 minutes
- add remaining Herbes, wine and broth and bring to a boil
- return roast to the pan, cover and place in oven
- roast at 250 for approximately 1 hour until internal temperature of roast reaches 160 degrees.
- remove roast from pan to serving dish and tent with foil, allow roast to rest for 20 minutes before slicing
- return the pan with the onion and apple mixture to the stove and simmer uncovered to reduce
- if you prefer a smoother sauce carefully blend with an immersion blender (I tilt the pan to provide a deeper mixture so there is no spatter)
- add salt and pepper to taste
- before carving roast add drippings to onion and apple and bring to full boil for a minute or so
- serve roast slices with onion and apple sauce either on top or on side
