  • Pork or Chicken in Basil Cream

    GroupRecipes show a creamy recipe which i liked.

    Ingredients

    • 1/4 c milk
    • 1/4 c dried bread crumbs
    • 4 skinless,boneless chicken breasts / or pork
    • 3 Tb butter
    • 1/2 c chicken broth
    • 1 c heavy whipping cream
    • 1 (4oz) jar sliced pimentos
    • 1/2 c parmesan cheese,grated
    • 1/4 c chopped fresh basil
    • 1/8 tsp ground black pepper

    Directions

    1. Place milk and bread crumbs in seperate,shallow bowls.
    2. In skillet,heat butter or margarine to medium heat.
    3. Dip chicken/pork in milkthen coat in crumbs. Cook in butter or margarine,on both sides,until juices run clear (about 10 mins).
    4. Remove and keep warm.
    5. Add broth to skillet.
    6. Bring to a boil over med. heat,and stir to loosen browned bits from pan. Stir in cream and pimentos;boil and stir for 1 min. Reduce heat.
    7. Add Parmesan cheese,basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve.
