  • Pork Chops With Apples And Sweet Potatoes

    Ingredients

    • 2 tsp Vegetable oil
    • 5 x Lean center-cut loin pork chops, (5-oz) (1/2 inch thick)
    • 2 1/2 c. Cubed peeled sweet potato, (1/2-inch) (1 lb.)
    • 1/2 c. Thinly sliced onion
    • 1 3/4 c. Orange juice, divided
    • 1/3 c. Firmly packed dark brown sugar
    • 2 Tbsp. Cider vinegar
    • 1/4 tsp Salt
    • 2 Tbsp. Cornstarch
    • 2 1/2 c. Cubed Rome apple, (1/2-inch) (3/4 lb.)

    Directions

    1. Heat oil in a large nonstick skillet over medium-high heat. Add in the pork chops; cook 3 min on each side or possibly till browned. Remove from skillet; set aside, and keep hot.
    2. Add in sweet potato and sliced onion to skillet, and saute/fry 3 min or possibly till tender.
    3. Combine 1-1/2 c. orange juice and next 3 ingredients, and stir well.
    4. Return chops to skillet; pour orange juice mix over chops. Cover, reduce heat, and simmer 1 hour or possibly till chops are tender.
    5. Remove the pork chops from skillet; set aside, and keep hot.
    6. Combine the remaining 1/4 c. of orange juice and cornstarch; stir well, and add in to the skillet. Stir in cubed apple; bring to a boil over medium heat, and cook for 1 minute, stirring constantly.
    7. Yield: 5 servings
    8. (serving size: 1 pork chop and 1 c. sweet potato mix).
    9. Serving Ideas : Serve over chops.
