Pork chops, pancetta and cheese parcels

- 6 boneless pork chops
- 1 tbs olive oil for brushing
- 250 g pancetta, cut into thin slices
- 1 small red apple, peeled, cored and cut into thin slices
- 150 g Brie cheese, sliced
Directions
1.Remove any visible fat from chops, flatten them lightly with a meat mallet and brush with olive oil. Season with black pepper.3.Lay out 4 slices of the pancetta so they overlap. Place a seared chop on top of each pile of pancetta. Divide the sliced apple and Brie between the pancetta piles, on top of the pork.Useful Links
