    Pork Chops Florentine-is an easy and quick (35) minute Italian style recipe. A great recipe to get your family to eat spinach also, as they won't even know it is there. Pork chops, frozen spinach, onions and marinara sauce combined and all cooked in a skillet; topped with cheese. It is also a low calories, low fat, low carbohydrates, Weight Watchers (8) PointsPlus recipe. Makes (6) servings.

    Ingredients

    • 2 tbsp olive oil
    • (1-1/2 lbs) boneless pork chops, 3/4" thick, (6 chops)
    • 1 medium onion, thinly sliced (about 1/2 cup)
    • 1 (24 oz) jar marinara sauce
    • 1 (10 oz) box frozen leaf spinach, thawed, well drained
    • 1 cup shredded fat-free Mozzarella cheese (4 oz)
    • Whole grain pasta, optional

    Directions

    1. Heat 1 tbsp of the oil in a 12" skillet over medium-high heat. Add in the pork chops; cook until chops are well browned on both sides. Remove and set them aside.
    2. Reduce heat to medium and add remaining oil. Add in onion. Cook and stir until onion is tender-crisp.
    3. Stir marinara sauce and spinach into the skillet and bring to to a boil. Return pork chops to skillet; reduce heat to low. Cover and cook until chops are cooked through. Sprinkle with cheese.
