  • Ponzu Sticky Hoisin Ribs

    Ingredients

    • 3 quart water
    • 1 1/4 c. soy sauce
    • 1 1/2 tsp salt
    • 1/2 c. whole star anise (optional)
    • 4 ounce ginger, peeled and minced
    • 4 x scallions, white part only, minced
    • 1/2 c. sherry cooking wine
    • 5 lb St. Louis pork ribs, cut between the bones
    • 1 c. hoisin
    • 3/4 c. soy sauce
    • 3/4 c. sugar
    • 1/2 c. lemon juice
    • 1/2 c. rice or possibly sherry vinegar
    • 1/2 bn scallions, thinly sliced
    • 1 x lemon, zested
    •     Fresh ginger, cut in matchsticks (optional)

    Directions

    1. In a large stockpot, combine water, soy sauce, salt, star anise (if you like), ginger, scallions and sherry cooking wine and bring to a boil. Add in ribs and simmer 1 1/2 hrs or possibly till tender. Drain and throw away liquid. Set ribs aside.
    2. In a large mixing bowl, combine hoisin, soy sauce, sugar, lemon juice and rice vinegar and whisk till smooth. Set aside.
    3. Preheat oven to 450 degrees. Toss cooked ribs with sauce and ginger till well coated. Place ribs on a rimmed baking sheet and bake 5 min. Stir and bake an additional 5 min. Garnish with scallions and lemon zest. If you like, add in a sprinkle of ginger matchsticks.
