Pomegranate Tiramisu

- ½ pomegranate arils ( for garnish)
- 1 cup pomegranate juice
- 3-4 tablespoon pomegranate concentrate or pomegranate liqueur (PAMA)
- 10-12 ladyfingers cut into 3 pieces each to fit in the glass
- 1 cup whipping cream
- 4 oz mascarpone cheese or cream cheese
- 3 tbsp marsala wine 2 tbsp shelled pistachios chopped (for garnish) 2 tbsp fine powdered sugar
Directions
- In a small bowl mix the pom juice, liqueur or pomegranate concentrate.
- In a mixing bowl whip mascarpone cheese, wine and sugar till its mixed well and creamy soft.
- In a separate bowl whip cream till it forms soft peak. Carefully fold the cream into the wine mixture till well incorporated, do not whip or beat.
- In the little serving glass, arrange one layer of the ladyfinger and pour about 3 tbsp juice mixture till they and moist but not soaking, gently press it down with back of a spoon.
- Spoon about 2-3 tbsp of the cream mixture. Even out the top.
- Garnish with pomegranate arils and pistachios.
- Cover with plastic wrap and chill well before serving.
