Pomegranate-Glazed Chicken with Blackberries

Ingredients

  • 1 cup unsweetened pomegranate juice
  • 1 tablespoon molasses
  • 1/4 cup packed brown sugar
  • 1 clove garlic, minced
  • 1/8 teaspoon crushed red pepper (I used more)
  • 4 boneless skinless chicken breasts
  • 1 pint blackberries

Directions

  1. In saucepan, simmer ingredients through red pepper until just syrupy (15-20 minutes) and reduced by about 1/2.
  2. Set aside about 2 tablespoons sauce for basting, mix blackberries with remaining sauce and set aside
  3. Grill chicken about 5 minutes per side, brush with glaze and continue grilling until chicken is cooked. Serve with blackberries and sauce.
