- Chicken half boneless 1
- French fries 80 gr
- Pomegranate molasses 5 cl
- Pomegranate syrup 15 cl
- Brown chicken stock 30 cl
- oil 1 cl
- Sherry vinegar 5 cl
- Sumac dressing
- radish 5 gr
- Fennel 10 gr
- Red onion 5 gr
- Tomato 10 gr
- Pencil asparagus 10 gr
- Purple cabbage 10 gr
- Spring onion 5 gr
- Cucumber 10 gr
Directions
- Method:
- .Sear the chicken in a hot pan.
- Cut all the vegetables for the slaw into a fine julienne, then season with sumac dressing(lemon juice, sumac, olive oil and the fresh herbs.)Check the seasoning.
- When the chicken is almost cook add the pomegranate sauce and glaze for 5 minutes, serve with french fries, check the consistency and the taste of the sauce,thin it down with water if necessary.
