Ingredients

  • 15 ounce canned pinto beans liquid removed and rinsed
  • 15 ounce canned black beans liquid removed and rinsed
  • 2 x carrots sliced
  • 1 x red bell pepper minced
  • 1 can tomato sauce (8 ounce)
  • 14 ounce canned tomatoes diced, undrained
  • 2 c. water
  • 1/2 c. bulgur uncooked
  • 1 c. frzn corn
  • 2 tsp chili pwdr
  • 2 tsp cumin
  • 1/2 tsp onion pwdr
  • 1/2 tsp garlic pwdr

Directions

  1. In large stockpot, combine all ingredients and bring to a boil. Reduce heat; cover and simmer for 45 min. Stir often to prevent bulgur from sticking, serves four.
  2. NOTES : I forgot to add in the water and it makes a hearty stew which way!
  3. This was very yummy.
