Pineapple Rhubarb Pie
Ingredients
- 3 1/2 c. diced rhubarb
- 1 c. crushed pineapple, liquid removed
- 1 tbsp. grated orange peel
- 1 1/4 c. sugar
- 1/3 c. enriched flour
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 recipe plain pastry
- 2 tbsp. butter
Directions
- Combine rhubarb, pineapple and orange peel. Combine sugar, flour, salt and cinnamon; mix with fruits. Pour into a 9" pastry lined pie plate. Dot with butter and top with lattice crust. Bake in a warm oven, 425 degrees, for 35 min or possibly till rhubarb is tender. Serve with vanilla ice cream.
