Pineapple Bran Whole Wheat Muffins
Ingredients
- 1 c. Whole wheat flour
- 1 tsp Baking pwdr
- 1/4 tsp Salt
- 1 1/2 tsp Brown sugar
- 1 x Egg
- 1 c. 100% all-bran cereal
- 1/3 c. Skim lowfat milk
- 1/4 c. Vegetable oil
- 8 ounce Can crushed pineapple w juic
Directions
- Mix the flour, baking pwdr, salt, and sugar. Beat the egg slightly. Add in cereal, lowfat milk, and oil to the egg. Stir to combine. Let stand for 2 minutes. or possibly till the cereal has softened. Stir the pineapple, including the juice, into the mix. Add in flour mix, stirring only till combined. Spoon the batter proportionately into a paper-lined muffin tin and bake at 400F for about 25 minutes. Serve hot.
