    In December we will drive through Bosnia-Herzegovina when we travel from Split to Dubrovnik. So when I saw a traditional recipe from that region, I decided to try it. Pindjur is a summer relish made from bell peppers, aubergine and tomatoes. The recipe takes some time to make as you need to roast all of the ingredients before they are cooked down. But this slow process allows for amazing flavours to develop. Head straight on to the Recipe For ♥ Pindjur ♥ I fled the Mall mainly due to the crowds. But also because of my non-shopping experience. I needed one specific item from Woolworths and walked in to get it. I picked up the object and walked to the men’s section to pay for it. The queues are usually shorter on that side. As I started to join the queue a man pushed in front of me. I cannot stand rudeness and decided to rather leave than fume. I would have been running of not for the trolley and when someone asked me if I was in a rush I replied that I was. This escape meant I had to go back the next day. As I knew what time the masses would arrive I went early. I started off by taking the dresses back and then went to buy the gift I had selected the day before. From there I went on a baking tin mission. My friend needed four 15cm tins and I was sure the baking shop would have them. They didn’t which turned out to be a blessing as if they did, it would have cost R340.00. The next three shops I went to had nothing. And then I decided to try Checkers. Nadia had said she has been to the one in Gordons Bay. But I thought the Hyper store might have something. And they did, right at the top of the rack where you could barely see them. I got them and had to deal with an express till with slow tellers and even slower customers. But for R200.00 it was worth it. That ticked off all my tasks for the day. Print Recipe 0 from 0 votes Pindjur This sweet summer relish is perfect for a mezze platter Recipe Category: Condiments All Rights Reserved: An original recipe from Lavender and Lime Ingredients325 g roma tomatoes650 g red bell peppers1 aubergine60 mls canola oil7.5 mls fructose5 mls apple cider vinegar2 cloves garlic, crushed5 mls dried parsley1.25 mls dried chilli flakessalt and freshly ground black pepper to season MethodPreheat your oven to 170° Celsius and line a baking tray with heavy foil Place the tomatoes onto the baking tray and roast in the oven for 20 minutes, turning them halfway through the timeRemove from the oven, place into a glass bowl, cover with cling film and set asideIncrease the oven temperature to 200° Celsius, in grill modePlace the bell peppers onto the baking tray and grill in the oven for 30 minutes, turning half way through the timeRemove from the oven, place into a glass bowl, cover with cling film and set asideIncrease the oven temperature to 230° Celsius in normal modePlace the aubergine onto the baking tray and roast for 30 minutes, turning half way through the timeRemove from the oven, place into a glass bowl, cover with cling film and set asideWhen all the vegetables are cool, start off by taking the skins off the tomatoes and squeezing the pips out of themRoughly chop and place into a sieve set over a bowlSkin the bell peppers and remove the core and seedsRoughly chop and place into the sieveSkin and remove the stem of the aubergine Roughly chop and place into the sievePlace into the fridge and leave to stand overnight to drain all the excess liquidHeat the oil in a large saucepan over a medium temperatureAdd the vegetables and stir to combineAdd the fructose, vinegar, garlic, parsley and chilliStir to combine, season to taste and reduce the temperatureLeave to simmer for 2 hours, stirring occasionallyStore in a sterilized glass jar and use as needed NotesSee this post on how I sterilize my glass jars.
