Pickled Red Onions w/Ginger and Spices
A nice condiment that goes well with roast chicken,fish on sandwiches or in salad with fresh greens. This condiment goes especially well with any type of BBQ such as burgers, ribs, pulled pork and brisket. Ingredients
- 1 lb red onions sliced not to thin {2 med. or 1 lg. }
- 11/2 cups cider vinegar
- 1/4 sugar
- spices
- 5 thin slices of fresh peeled ginger root
- 5 whole cloves
- 1 bay leaf
- 1 star anise
- 1/4 tsp mustard seeds
- dash red pepper flakes
Directions
- Blanch onions in boiling water for 2 minutes then drain.
- In another saucepan combine vinegar,sugar and spices. Bring to a boil then reduce heat and simmer covered for for 5 minutes.
- Add blanched drained onions and simmer an additional 2 minutes.
- Transfer to glass jars. Let stand until totally cooled.
- These will last for weeks in the refrigerator.
