Pickled Beet And Onion Salad
Ingredients
- 1 med. sweet onion very thinly sliced (1 c.)
- 2 c. sliced pickled beets
- 1/4 c. beet juice
- 1/4 c. French dressing
- 1/4 c. thick lowfat sour cream
Directions
- Combine onion rings with pickled beets and juice. Refrigerateat least 1 hour. Drain juice from onion and beets, placing beets and onions on serving dish. Combine juice and French dressing. Pour over beets and onion rings. Serve topped with lowfat sour cream. 5 to 6 servings.
