pesto pancakes
i know this sounds like a weird thing to do but while i was on a 7 day canoe trip. we had leftover pesto sauce, eggs and flour that we had to use so i was like. why not make pesto pancakes and no one was really expecting the outcome to be soo good. they were so amazing all the different pancake recipes i have seen have never done something like putting pesto sauce into the pancakes themselves. Ingredients
- 1 1/4 - 2 cups of flour ( depending on how think you want them)
- 1/2 - 1 cup of sugar ( i only used a cup because i used a bit to much flour so 1/2 cup should work )
- 2 teaspons baking soda
- 1 teaspoon of vanilla extract
- 1 cup of milk
- 1 beaten egg
- vegetable oil or butter ( enough to grease pan before each pancake)
- 5- 7 table spoons (depending on how much you want in each pancake. i use)
- TOPPING
- sprinkle of almond powder
- organic honey
Directions
- in a bowl mix flour, sugar, and baking soda and sift or mix until combined.
- Beat egg in a seperate bowl.
- In another bowl mix vanilla extract and milk until combined
- next pour the milk mixture into the dry ingredients and mix until combined.
- pour in the egg and mix until combined
- take the butter or oil and grease the pan
- pour 1/4cup of batter into center of pan
- pours 1-2 tablespoons of pesto sauce onto the pancakes
- pour more batter onto the top of the pesto sauce
- leave on until bottom is golden brown then flip
- mix almond powder and honey and top the ppancakes with it.
