  • pesto pancakes

    i know this sounds like a weird thing to do but while i was on a 7 day canoe trip. we had leftover pesto sauce, eggs and flour that we had to use so i was like. why not make pesto pancakes and no one was really expecting the outcome to be soo good. they were so amazing all the different pancake recipes i have seen have never done something like putting pesto sauce into the pancakes themselves.

    Ingredients

    • 1 1/4 - 2 cups of flour ( depending on how think you want them)
    • 1/2 - 1 cup of sugar ( i only used a cup because i used a bit to much flour so 1/2 cup should work )
    • 2 teaspons baking soda
    • 1 teaspoon of vanilla extract
    • 1 cup of milk
    • 1 beaten egg
    • vegetable oil or butter ( enough to grease pan before each pancake)
    • 5- 7 table spoons (depending on how much you want in each pancake. i use)
    • TOPPING
    • sprinkle of almond powder
    • organic honey

    Directions

    1. in a bowl mix flour, sugar, and baking soda and sift or mix until combined.
    2. Beat egg in a seperate bowl.
    3. In another bowl mix vanilla extract and milk until combined
    4. next pour the milk mixture into the dry ingredients and mix until combined.
    5. pour in the egg and mix until combined
    6. take the butter or oil and grease the pan
    7. pour 1/4cup of batter into center of pan
    8. pours 1-2 tablespoons of pesto sauce onto the pancakes
    9. pour more batter onto the top of the pesto sauce
    10. leave on until bottom is golden brown then flip
    11. mix almond powder and honey and top the ppancakes with it.
