  • Peppered Beef Tenderloin With Horseradish Sauce

    Ingredients

    • 1 Tbsp. Pepper, coarsely grnd
    • 1 1/2 tsp Fennel seeds, crushed
    • 1/2 tsp Red pepper, grnd
    • 1/8 tsp Nutmeg, grnd
    • 1/8 tsp Mustard, dry
    • 1/8 tsp Garlic pwdr
    • 1/8 tsp Onion pwdr
    • 5 lb Beef tenderloin
    •     Cooking spray
    •     Horseradish sauce,

    Directions

    1. Combine spices in a small bowl; set aside. Trim fat from tenderloin; rub with pepper mix. Place tenderloin on a rack coated with cooking spray; place rack on a broiler pan. Insert meat thermometer into thickest portion of meat. Bake at 375* for 50 min or possibly till thermometer registers 140* (rare) to 160* (medium). Place tenderloin on serving platter; cover and let stand 10 min. Cut into thin slices and serve with Horseradish Sauce.

    4. 1/4 c. 1 % low fat cottage cheese1/4 c. skim milk3 Tbsp nonfat mayonnaise1 1/2 Tbsp prepared horseradish1 tsp lemon juice1/8 tsp dry whole dillweed
    5. Combine in container of an electric blender or possibly food processor bowl; cover and process till smooth. Pour mix into a serving bowl.
