Penne with Mushrooms in White Sauce

I like pasta as much as pizza. It is one of my guilt pleasures. This recipe is very easy to do and tasty even for the kids.

Ingredients

  • 2 teaspoons vegetable oil
  • 5 spring onions, thinly sliced
  • 4 cloves garlic, crushed
  • 250g fresh shiitake mushrooms, trimmed, halved and thinly sliced
  • 500g button mushrooms, halved and thinly sliced
  • Salt
  • 1 1/2 tablespoons plain flour
  • 2 cups low-fat milk
  • White pepper
  • 375g penne
  • 1 teaspoon unsalted butter
  • 1/4 cup grated Parmesan cheese

Directions

  1. Heat the oil in a large nonstick frying pan over moderate heat.
  2. Add the spring onions and garlic and sauté for 2 minutes. Add the shiitakes, cover and cook, stirring occasionally, for 5 minutes or until tender.
  3. Add the button mushrooms and sprinkle with salt to taste.
  4. Cover and cook, stirring occasionally, for 5 minutes.
  5. Increase the heat to high, uncover and cook for 4 minutes or until the liquid has evaporated.
  6. Sprinkle with the flour, stirring until absorbed.
  7. Gradually add the milk and cook, stirring, for 5 minutes or until slightly thickened. Stir in pepper to taste.
  8. Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender.
  9. Drain well and transfer to a large serving bowl.
  10. Add the sauce, butter and Parmesan to the hot pasta, tossing well to coat, then top with another grinding of pepper.
  11. I like finishing it with a sprinkle of diced fresh basil leaves on top.
