Penne With A Quick Sausage Sauce ( Penne Con Sugo Di Salsiccie Alla Cloe )
Ingredients
- 2 Tbsp. extra virgin olive oil
- 2 sm red onions peeled and minced
- 5 x italian spiced fresh pork sausages meat removed from skins and crumbled
- 1 1/2 Tbsp. minced fresh rosemary
- 2 x bay leaves
- 2 sm dry chlilies crumbled
- 1 x 800g tin peeled plum tomatoes liquid removed and minced
- sea salt and freshly grnd black pepper
- 250 gm penne rigate
- 150 ml double cream
- 120 gm parmesan freshly grated
Directions
- In a large saucepan heat the oil and fry the onion till light brown.
- Add in the crumbled sausage the rosemary bay leaves and chilli.
- Fry together over a high heat stirring to mash the sausages.
- Remove all but 1 Tbsp. of the fat and continue to cook for 20 min.
- The sausage meat should become brown and disintegrate.
- Add in the tomatoes stir and return to the boil.
- Remove from the stove.
- Cook the penne in a generous amount of boiling salted water then drain thoroughly.
- Stir the cream into the sauce along with the liquid removed penne and half the Parmesan.
- Serve with the remaining Parmesan.
- Serves 6
