  • Peanutbutter cookies

    This recipe works well using a cookie press, very economical and tasty to boot!

    Ingredients

    • 1tsp bicarbonate of soda, dissolved in a 1/4 c milk
    • 2 eggs
    • 1/8 tsp salt
    • 2 c brown sugar
    • 3 cups flour, sifted
    • 125 g margerine/ butter
    • 4 tbsp peanutbutter

    Directions

    1. Preheat oven to 350*F
    2. Beat the sugar and butter until creamy
    3. Add one egg at a time, beating well after each addition
    4. Add peanutbutter and milk mixture,beat well
    5. Fold in the sifted flour, don't overmix
    6. Allow to rest 30 minutes while preparing the biscuit sheets, they must be free of any grease in order for the biscuits to stick
    7. Alternatively, you can roll small balls, place them on a greased sheet and press flatter using a fork
    8. Bake for approximately ten minutes
    9. Allow to cool slightly before transferring them to a cooling rack
    10. If they are stuck, they are to cold, then replace the sheet back in the oven for a minute or two
    11. Store in a airtight container
