    Peanut Butter & Banana Wrap Snack

    A great anytime snack that children can either help make, or make themselves, depending on age. Each ingredient makes a special contribution to this wrap, so try it first as is, then tweak it if you like. Whole wheat tortillas pack a powerhouse of fiber, but you have to check the labels. The tortillas I opt for are 8 1/2 inches diameter, with each 47 gram tortilla at 100 calories, 5 g fiber, 3 g protien, and no trans or saturated fats. One recipe serves 2 children, unless you've a teenager with a hollow leg! In a pinch I have substituted thinly sliced then diced apples for the banana.

    Ingredients

    • 1 whole wheat tortilla 8 or 9 inches in diameter
    • 2 tablespoons natural peanut butter
    • 1 small banana peeled and sliced thinly
    • 2 tablespoons dried cranberries or raisins
    • Romaine or green leafy lettuce leaves

    Directions

    1. Heat tortilla in microwave 5-8 seconds to make it easier to roll. Spread peanut butter on one side of tortilla, right to edges. Arrange banana slices evenly over peanut butter and sprinkle cranberries on top. Place romaine or green leafy lettuce leaves on top and press down lightly. Roll up tortilla carefully keeping filling intact. Cut in half to make two servings.
