Peanut Butter whoopie pies

A cakey, tender whoopie pie with a rich peanut butter frosting center!

Ingredients

  • Cookies:
  • 3 1/2 cups All purpose flour
  • 1 1/2 cups unsweetened cocoa powder
  • 1 Tablespoon baking soda
  • 1 Teaspoon baking powder
  • 1 cup (2sticks) butter
  • 2 cups sugar
  • 2 large eggs
  • 2 cups buttermilk
  • 2 teaspoons vannila extract
  • Frosting:
  • 1 1/2 cups smooth peanut butter
  • 1 cup butter
  • 1 1/2 cups confectioners sugar
  • salt

Directions

  1. Preheat oven to 400F
  2. Line 2 baking sheets with parchment
  3. sift together flour,cocoa powder,baking powder,and baking soda
  4. beat butter,and sugar in a mixer until fluffy
  5. add vannila,eggs, and buttermilk
  6. beat until combined, adding dry ingredients slowly
  7. Drop 2 Tb of batter spaced 2 inches apart on the baking sheets
  8. bake for 8 minutes, rotating half way through
  9. with an electric mixer beat butter and beanut butter until smooth
  10. add confectioners sugar and beat until fluffy
  11. spread a heaping tablespoon of frosting onto a cookie and sandwich betweeen another one
  12. repeat with remaining cookies and frosting
