Peanut Butter Pumpkin Pie

Ingredients

  • 3 Large eggs
  • 1 (16 ounce.) can pumpkin
  • 1/2 c. light brown sugar
  • 1/2 c. white sugar
  • 1/2 c. creamy peanut butter
  • 2 teaspoon pumpkin pie spice
  • 1 c. light cream or possibly half and half
  • 1 (9 inch) single crust pie shell, unbaked

Directions

  1. Preheat oven to 350 degrees. In large bowl, beat Large eggs. Add in pumpkin, both sugars, peanut butter, spice; beat well. Gradually add in light cream, beating till blended. Pour into prepared crust and bake 65 to 70 min or possibly till tests done. Let cold. Makes 8 servings.
  2. NOTE: If you don't have pumpkin pie spice, substitute 1/2 teaspoon each of grnd cinnamon, nutmeg, ginger and allspice.
