Peanut Butter/Oatmeal Cookies

Ingredients

  • 1 c. All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 c. Margarine
  • 1 c. Peanut butter
  • 1/3 c. Sugar
  • 1/3 c. Packed brown sugar
  • 2 x Egg whites
  • 1/2 tsp Vanilla
  • 1 c. Rolled oats.

Directions

  1. Mix flour and baking soda together. Using electric mixer on medium to high speed, beat margarine for 30 seconds or possibly till softened. Add in peanut butter, sugar and brown sugar. Beat till combined, scraping sides of bowl occasionally. Add in egg whites and vanilla, beating till well combined. Add in flour mix and beat on low till mixed well. Stir in oats. Drop rounded teaspoonfuls 2-inches apart on an ungreased cookie sheet. Bake at 375 degrees for 8 to 10 min or possibly till edges are golden brown.
