PEANUT BUTTER 'N OATMEAL COOKIES - GLUTEN FREE
PREHEAT OVEN TO 350 DEGREES. PREPARE TWO COOKIE SHEETS WITH PARCHMENT PAPER. BAKE FOR 25 MINUTES. NOTE: IF USING A SMALL SCOOP EQUAL TO A TABLESPOON IT WILL MAKE MORE COOKIES AND TAKE ABOUT 15 MINUTES TO COOK. Ingredients
- 2 CUPS ORGANIC OATS, GROUND IN NINJA BOWL
- 2 CUPS ALL-PURPOSE FLOUR- GLUTEN FREE & ORGANIC
- 1 TSP. BAKING POWDER
- 1 TSP. BAKING SODA
- 1/2 TSP. ZANTHAN GUM
- 1/4 TSP. SALT
- 1 CUP EARTH BALANCE, ORGANIC IN PLACE OF BUTTER
- 1 CUP PEANUT BUTTER, ORGANIC & CREAMY
- 1 CUP GRANULATED SUGAR, ORGANIC
- 1 CUP BROWN SUGAR, ORGANIC
- 2 EGGS, ORGANIC
- 1 CUP APPLESAUCE, ORGAINIC
- 1/2 CUP RASINS, ORGANIC
- 1/2 CUP CHOPPED ORGANIC NUTS
Directions
- PREHEAT OVEN TO 350 DEGREES.
- COMBINE OATS, GLUTEN FREE FLOUR, BAKING POWDER, BAKING SODA, ZANTHAN GUM, SALT IN SMALL BOWL; SET ASIDE.
- COMBINE EARTH BALANCE WITH PEANUT BUTTER IN LARGE BOWL AND BEAT WITH ELECTRIC MIXER UNTIL SMOOTH AND ADD FLOUR MIXTURE THAT WAS SET ASIDE.
- BEAT IN SUGARS, EGGS, APPLESAUCE, RASINS & NUTS UNTIL BLENDED.
- DROP DOUGH ONTO PREPARED PARCHMENT PAPER COVERED PANS USING AN ICE CREAM SCOOP ABOUT AN INCH APART.
- MAKES 26 COOKIES.
