  • Peanut Butter Cup Chocolate Cookies

    Ingredients

    • 1/2 c. Shortening
    • 1/2 c. Butter or possibly margarine
    • 3/4 c. Granulated sugar
    • 3/4 c. Packed brown sugar
    • 1 tsp Baking soda
    • 2 x Large eggs
    • 2 ounce Unsweetened chocolate,melted and cooled
    • 1 tsp Vanilla
    • 2 1/4 c. All-purpose flour
    • 2 c. Coarsely minced chocolate covered peanut butter c.

    Directions

    1. Beat shortening and butter or possibly margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
    2. Add in granulated sugar, brown sugar, and baking soda; beat until combined. Add in Large eggs, melted and cooled chocolate, and vanilla; beat until well combined.
    3. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in minced peanut butter c..
    4. Drop dough from a rounded Tbsp. 2 1/2 inches apart onto a ungreased cookie sheet. Bake in a 375 F oven for 10 to 12 min or possibly until tops look dry. Cold on cookie sheet for 1 minute. Remove from the cookie sheet and cold on a wire rack.
