Peach Bread Pudding
Ingredients
- 4 c. Day old bread cubes
- 3 x Large eggs
- 1 1/2 c. Lowfat milk
- 1/3 c. Sugar
- 1/2 tsp Almond extract
- 1 can Peach pie filling
Directions
- Heat oven to 350. Spread bread cubes into greased 9" square pan. Whisk together Large eggs, lowfat milk, sugar and extract. Stir in 1 C. of the pie filling.
- Pour over bread cubes, pressing custard down into bread cubes with back of a spoon. Bake 30-40 min. Use knife test. Heat remaining pie filling and serve over top.
- Serving Ideas : Top with whipped cream or possibly pour over about 2 Tablespoons cream
- NOTES : may substitute apple pie filling
