Paximadia ~ Greek Biscottis

A nice cookie for Christmas or just to enjoy with your morning coffee. Packs well and can be frozen

Ingredients

  • 2 Cubes butter
  • 1 1/2 Cup sugar
  • 3 Slightly beaten eggs
  • 1 Jigger Brandy or Metaxi
  • 1 Tsp Vanilla
  • 1 Tbs. Baking powder
  • 1 Tsp. Salt
  • 4 Cups flour
  • Sesame Seeds

Directions

  1. Cream butter and sugar together, adding eggs one at a time
  2. Add Brandy, vanilla, baking powder and salt
  3. Add flour, you may need to add a bit more to make it easier to roll out.
  4. Roll out dough and cut into 3 equal sections, roll each section into a long roll, the size of your cookie sheet 11 X 17 Roll the three sections into a long snake
  5. Roll this into sesame seeds
  6. Score each roll into 19-20 sections, you will cut on this line after they are baked
  7. Bake 350 for 30 minutes
  8. Pull out of oven and cut on the scored line, lay out on cookie sheet cut side down and bake for app 15 minutes or until golden
