    Patriot Pie No Bake-Fruity Cream Cheese Pie

    This is a vegan no-bake cream cheese pie with fruity topping. It's pretty as a picture and tastes fabulous!

    Ingredients

    • Crust
    • 9 whole Graham Crackers, crumbled
    • 3 tablespoons Earth Balance vegan butter, melted
    • 1 tablespoon agave nectar
    • Filling
    • 1 pkg.(12.3 oz.) Silken brand firm tofu
    • 1 pkg.(8 oz.) Tofutti brand "Better than Cream Cheese"
    • 1 cup of chopped, fresh strawberries
    • 1 tablespoon guar or xanthan gum
    • 4 tablespoons agave nectar
    • 1/4 teaspoon white vanilla extract
    • Topping
    • Sliced fresh strawberries
    • Fresh blueberries

    Directions

    1. Crumble 1 package (9 crackers) of Graham Crackers into powder
    2. In a food processor, add the Graham cracker, melted Earth Balance and agave nectar. Process until blended.
    3. Scrape the graham cracker mixture into an 8 inch pie plate and
    4. press it down to cover the bottom and up a little on the sides.
    5. Use the food processor for the filling as well. Put the strawberries
    6. in the food processor and process til "pureed". Add the Silken
    7. firm tofu and blend with the strawberries. Add the Tofutti Cream
    8. Cheese, agave nectar and vanilla. Process intil blended. Add in the guar gum and process to mix into the filling mixture.
    9. After the filling has been thoroughly blended add it to the pie plate and spread it to the edges.
    10. Top with thinly sliced strawberries and blueberries.
    11. Take a picture in front of "Old Glory" (Required).
    12. Refrigerate for at least an hour before serving.
