Pasta with Sage and Carrots
Total time: 20 minutes Ingredients:
20 – 40 fresh sage leaves, about 2/3 cup, chopped
3 tbs garlic chives, chopped
1 onion, thinly sliced
3 carrots, julienned
4 tbs fresh lemon juice
1 tbs olive oil
1 tbs butter
4 tbs chicken stock
1/2 cup freshly grated Parmesan
1 1/4 cup bite-size pasta
Instructions:
Cook pasta according to package directions. When done drain.
Heat oil and butter in medium skillet over medium heat.
Add carrots, onion and sauté 10 minutes, stirring occasionally for even cooking.
Add sage, chives and sauté 5 minutes longer.
Add chicken stock, lemon juice and heat through.
Test a carrot – if not done cover for a few minutes (mine were done)
When ready, add pasta and stir to combine.
Sprinkle with Parmesan and serve.
