Pasta With Grilled Shrimp And Vegetable Marinara
Ingredients
- 1 med zucchini, quartered and sliced
- 6 ounce fresh mushrooms
- 3/4 c. Italian salad dressing, low divided
- 3/4 lb medium fresh shrimp, peeled and deveined
- 12 ounce fettucine, uncooked
- 28 ounce marinara sauce
Directions
- In large baking dish, toss vegetables and 1/2 c. salad dressing; cover. In small bowl, toss shrimp, and remaining dressing; cover. Marinate vegetables and shrimp 30 min; drain.
- Grill or possibly broil vegetables till slightly brown, about 5 minutes per side. Grill or possibly broil shrimp till pink, about 2 minutes per side. Cook pasta according to package directions; drain.
- Meanwhile, in large saucepan, stir together marinara sauce and vegetables, heat to boiling. Reduce heat; add in shrimp and heat through. Toss warm pasta and sauce.
