Pasta With Grilled Shrimp And Pineapple Salsa
Ingredients
- 1/2 lrg pineapple peeled, cored,
- and minced
- (or possibly 2 [15-ounce] cans pineapple chunks, liquid removed)
- 1 lrg red pepper minced
- 1 lrg red onion minced
- 1 x jalapeno pepper chopped
- 1/2 c. fresh orange juice
- 1/3 c. lime juice
- 1 1/2 lb deveined peeled large shrimp
- 6 c. cooked rotini noodles
Directions
- In a large bowl, combine all ingredients for the salsa. Set aside.
- Prepare an outdoor grill with an oiled rack set 6 inches from the coals. On a gas grill, place the setting to high. Grill the shrimp for 2 min per side.
- Toss the cooked noodles with the salsa. Arrange the shrimp on the pasta and serve.
- This recipe yields 6 servings.
- Serving size: 3 ounces shrimp, 1 c. pasta.
